If it’s one thing I know, it’s that little one’s are never really a fan of big bold flavours. Hell, fling 15 chili’s my way and I am happy gall but when I was little I’m pretty sure I would have ran for the hills at the near sight of the crazy red stuff!!
I was actually really surprised by these little guys! It’s always a task getting kiddos to munch on vegetables. Often they’ll end up staying on the plate or more realistically flicked on the floor!
This recipe is a fab way making veg fun and pretty yum!

Benefits of cauliflower
Most surprisingly, cauliflower has 100% of your daily recommendation of your vitamin C! So this recipe is so great to make for little ones who are frequently catching colds and healing those runny noses.
It has vitamin K, calcium and potassium! It also has a good source of fibre which is great for you know what and cauliflower is also packed with water so this meal is an awesome way of making sure your baby is having enough fluids!
Another little fun fact about cauliflower is that it has a group of substances called glucosinolates. As you chew and digest it, it’s broken down into compounds that may help prevent cancer- they help protect cells from damage and have anti-inflammatory, antiviral, and antibacterial effects!

As much as I would like to have you running to the shop for a million ingredients you’ll be surprised to know that this recipe is super duper minimal!
What do I need for deliciousness?
- I cauliflower chopped into chunks
- 2 eggs
- A half-cup for flour
- A little salt and pepper
- Coconut or olive oil for frying
So all you have to do is boil all the cauliflower bits until they are soft and tender.
Then, pop the pot of cauliflower off the stove, drain the water, then add in the eggs, flour and a little salt and pepper.
With a fork, mash it all together. You could blend the ingredients too if your little one isn’t a fan of lumps but for us, that would just mean more washing up and my Nanny kiddo didn’t mind so it was a win-win situation!
Pop some oil in your frying pan and put on medium heat. Grab a small handful of the mixture and smush it together in your hands until it resembles a little ball of goodness. Pop onto the hot pan and let it sizzle away until it is brownish on the bottom and flip over to cook the other side.
Now do this with your remaining mixture and lunch is ready!
My Nanny kiddo (and the parents lol) really loved them! They are very mild in flavour which is always great for little ones and the crispness from frying helps give it a little crunch!
I’ll for sure be making them again, even for older children (ie my partner).
