If you always feel like you are making the same thing for your little one, then this recipe is for you!
I just love really healthy recipes for kiddie winkles that are super quick and cheap to make!
In my little cups, I used kale, cheese and tomatoes but you can really throw in other veggies or meat depending what’s hiding in the fridge!
So, without further ado, here’s what you gotta do!
Ingredients
As mentioned previously, I used about a half cup of cheese, two chopped tomatoes and a handfull of finely chopped kale.
You’ll need about 2 or 3 whisked eggs depending on how much you want to make and/or save for the next day!
My nanny kiddo seemed to really enjoy these ingredients although I wouldn’t hesitate to try combinations such as:
- Ham/ tomatoes/ cheese
- Spinach and broccoli
- Peas/ sweetcorn/ cheese
- Plain eggs
- Turkey slices and chopped carrots
Method
So first, ladies and gentlemen whisk up your eggs with some elbow grease!
Then toss in the chopped, tomatoes and cheese! Side note- what I just said rhymed didn’t it?
Next just scoop up the mixture with a spoon and pop into a pre-greased. baking tray. I used one that has tiny little sections for tiny cakes.
Then just throw into the oven for 20 minutes or until it looks slightly brown!
And here you have the finished product!
I’ve been baking up a storm recently for my nanny kiddo and I have so much to share with you! I made some delicious cauliflower fritters which you can link to here, they were so simple to make and very scrumptious!
Plus all for free by yours truly I have another recipe called Salmon and Orzo balls for babies and toddlers! You’ll be able to find that right here!
Please as always let me know if you tried these little eggs cups and what are your go-to recipes for your little ones? Let me know below!
Happy cooking!
